REFRESHING SUMMERTIME SOUP- GAZPACHO

Here is a recipe for a chilled soup.

GAZPACHO SOUP

It reminds me of bloody mary with the ingredients.  Use fresh organic veggies when ever possible for best flavor.  Chopped canned tomatoes can be substituted.

6 ripe tomatoes (slit bottom, blanch in boiling water 2 min to remove skin)

one yellow or white onion- chopped and saute’d with the garlic

1 chopped garlic to taste about 1 teaspoon

1 garden fresh cucumber peeled and seeded, chopped.

salt, pepper, worcester sauce, hot sauce, lemon juice, parsley, celery to taste.

6 cups of tomato juice (I used Clamato juice)

Mix and refrigerate over night.

Serve with fresh onions, avacado and cooked shrimp!!  Enjoy.
